Ingredients For the Apple: 1 cup apple juice, boiled and cooled, or apple cider vinegar or lemon juice, preferably in a saucepan of boiling water 3 tablespoons sugar 2 cups all-purpose flour (I used all-spice) 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon sugar For the Chocolate Frosting: 1 tablespoon melted butter 1 cup powdered sugar 1/4 cup honey, freshly squeezed 1/2 cup brown sugar 1 cup unsalted butter, melted 1/3 cup finely chopped pecans, chopped (or 1 cup chopped almonds) 1/8 teaspoon cinnamon 1/16 teaspoon salt For the Cake: 2 tablespoons butter, softened 1 cup flour 1 cup sugar 1 tablespoon cocoa powder For the Honey: 1/5 cup honey 1/6 cup brown butter, cut into cubes (or 3 tablespoons) 3 tablespoons unsalted sugar For topping: 1-1/4 cups chocolate frosted drizzle 2 tablespoons unsweetened cocoa powder Directions: In a sauce pan of boiling warm water, combine the apple juice and the apple cider, sugar and flour.
Bring to a boil, then lower heat and simmer until the mixture is thick, about 2-3 minutes.
Remove from heat, stir in the butter, sugar, cocoa powder and salt.
Let the mixture cool for a few minutes and then remove from the heat.
Mix together the butter and brown sugar until well blended.
Add the remaining ingredients, stirring until well combined.
Let this mixture sit for 10 minutes before frosting.
This will make the honey slightly less thick and the frosting slightly less shiny.
Add 1-2 tablespoons of honey to each cake layer.
Spread the frosted layer over the honey layer, smoothing out the top.
Top with another layer of honey and drizzle the remaining honey over the top of the cake, then top with another cake layer of chocolate frost.
Allow to chill in the fridge for at least two hours before serving.
